Chocolate Chip Cookies

Chocolate Chip Cookies

Yield: 18-20 cookies

Total time: 20 minutes

Ingredients

Softened Butter or Coconut Oil | 2/3 cup
Stevia | 2/3 cup
Eggs | 2
Vanilla Extract | 2 teaspoons
Almond Flour | 3 cups
Baking Soda | ½ teaspoon
Salt | ½ teaspoon
Lilly’s Chocolate Chips (low carb) | ½ 9-ounce bag

Directions

  1. Pre-heat oven to 350. Add softened butter (or coconut oil) and swerve sweetener in a stand mixer, mix on medium until combined
  2. Add 2 eggs and vanilla and mix until combined
  3. Combine almond flour, baking soda, and salt in a medium bowl
  4. Add dry ingredients to wet ingredients and mix until combined
  5. Fold in Lily's Chocolate Chips. Scoop 18-20 cookies onto lined baking sheet. Bake for 10-12 minutes
  6. Let cool on the cookie sheets for 30 minutes.
