Egg Cup

INGREDIENTS:

  • Eggs x6
  • Pepperoni
  • Ham slices - thin x6
  • Cheese or coconut shreds
  • Cumin, salt, pepper

INSTRUCTIONS:

  1. Scramble the eggs and add the spices to your preferred taste. 
  2. Take a muffin tray and coat the cups with coconut oil or butter to prevent sticking. 
  3. Place a thin sliced piece of ham into the cup and shape it to the cup. x6 cups
  4. Add a single slice of pepperoni to the base. 
  5. Pour in the egg mixture evenly distributed, into each of the 6 cups. 
  6. Cover with your favorite cheese or use coconut shreds if preferred. 
  7. Bake in 350 degree oven for 20 minutes. Eggs will rise. Touch to confirm that it is firm and fully cooked. 
  8. Eat them hot or allow them to cool and store in the refrigerator for a quick grab and go breakfast tomorrow.
